Chocolate Black Bean Cookies

These Chocolate Cookies do contain more protein than average cookies, because of the bean flour...

They are easy to make, taste great and are healthy, too.

Ingredients:

10 - 20g Cocoa Butter/ Coconut Oil

15g Cocoa Powder

2 tsp Cacao Nibs

65g Black Bean Flour*

35g Buckwheat Flour*

35 - 45g Maple Syrup

1/8 tsp Vanilla Powder (grounded Vanilla Bean)

1/2 tsp Baking Soda

80 - 100ml Water

*make your own flour by using a high speed blender

- preheat the oven to 180C°/ 355F° and line a baking tray with parchment paper

- melt the cocoa butter in a bowl over a water bath

- add in maple syrup, cocoa powder and cacao nibs, stir

- in a seperate bowl mir the rest of the dry ingredients and slowly add them into the cocoa mixture

- when pouring in the water add bit after bit, you need less when you used more maple syrup (want sweeter cookies) and need more when used less maple syrup

- mix everything until well combined

- place 5 blobs on the parchent paper, with about 1,5 cm thickness and bake for 13 - 18 minutes, then will become a bit flatter and wider while baking

- also tastes good when adding 60 - 70 g of fine chopped hokkaido pumpkin
