"Oreo" Cookies - Raw, Vegan, Gluten Free
Simple ingredients, great taste!
I only need 35 Minutes to make them, most of it is cool time... YES!

Ingredients - Cookies
2 1/2 - 4 tsp (16g -21g) Date Paste*
2 tbsp + 2 tsp (19g) Cacao Powder (you also can use cocoa powder, which is not raw)
1 tbsp + 1tsp (12g) Flaxmeal
4 tbsp (30g) Tigernut Flour
2 -4 tbsp (30-45ml) Water
*(for the Date Paste I soaked 1 1/2 Cup (135g) Dates in 1/2 Cup (125ml) Water for 1 hour and blended it all up - you also can buy it)
Ingredients - Filling
1 tbsp (13g) Cocoa Butter*
Pinch of Vanilla
1 tbsp (18-20g) Date Paste
*(you can use coconut oil or any other fat you want, but cocoa butter gives it a special taste, which I like, and it makes is a little harder)
Mix the Cookie ingredients, but add the water slowly you want the mixture to be thick like a dough for "cut out cookies". Then set aside.
Melt the Cocoa Butter in a water bath (double boiler), take it out of the water bath and add the Vanille and Date Paste. Mix it untill well combined, it should look like creamy caramel. Put the Filling Mixture in the fridge and wait 15 to 30 minutes.
In this time you can make the cookies. Form 6 bigger or 12 smaller ones, or ar many as you like. Just keep in mind you need one for the bottom and one for the top =).
Take the Filling out of the fridge and make as many balls you need, put them on one cookie and press another one on top.
You are done and can enjoy them right away or put them back into the fridge to harden up again.
