Apricot Balls with Ginger

This raw, vegan and gluten free treat is easy to make and really yummy <3

 

Ingredients

 

2/3 cup (90g) dried apricots

1/2 cup (45g) almonds*

2 tbsp (15g) tigernut flour or 15g whole tigernuts

1/2 tsp cinnamon

pinch of vanilla powder or fresh vanilla bean oder some vanilla extract

a piece of fresh ginger

* I soak the almonds over night and let them dry again, this way the almonds are a lot more easy to digest

 

Put all ingedients into a blender or a food processor and blend untill everything is combined.

Roll it into balls of the size you preferre.

You can also dust it with cinnamon, cocoa powder, coconutflakes or whatever you desire.

Store it in a jar in the fride or in a cool room... when it last for a storage.
